WHAT YOU NEED:

For 8 servings

Cheesecake Base:

  • 2 Cups Almond Flour
  • 1/4 Cup Erythritol
  • 75 g Butter
  • Pinch Sea Salt

Cheesecake Filling:

  • 2 Tubs Creamcheese
  • 1 Cup Double Cream
  • 1/4 Cup Erythritol
  • 1 Tsp Vanilla Essence
  • 1/3 Cup Berries

HOW TO MAKE:

  1. First, mix almond flour, erythritol and salt into melted butter.
  2. Then, press mixture into 9 inch springform baking tin.
  3. Next, bake for 10 minutes at 160°C
  4. Then, remove from oven and allow to cool for 30 minutes
  5. While base is cooling: whisk the cream, cream cheese, vanilla essence and erythritol together until mixture becomes very thick.
  6. Then, stir in Berries.
  7. Next, pour mix onto cooled base and freeze for at least 4 hours, ideally overnight. Remove from tin and store in refrigerator.
  8. If freezing overnight, defrost for one hour before serving.
  9. And last.. serve & enjoy!
